He was cooking for Prince Edward of Wales and his distinguished guest — a French noble dame named Suzette. He inadvertently ruined a sauce for the crepes, but then realized he had made a tasty new dish. The prince decided to name it “Crepe Suzette.” Crepe Suzette consists of a crisp, thinly rolled, or folded pancake and a sauce made from caramelized sugar and butter, and either tangerine or orange juice, and French liqueur like Grand Marnier.

It signals the start of the summer-long Sun Awareness Campaign which centers around teaching people about skin cancer, as well as informing them about how to increase their protection when they step out into the sun. Since ancient times, the world has understood that the sun provides warmth, life, and vitality. The discovery of ultraviolet light is attributed to a German physicist, Johann Wilhelm Ritter, who noticed that the invisible rays in the spectrum of lights at the violet end were very effective at darkening silver chloride-soaked paper. As time went by, more and more scientists reported adverse reactions to U.V. rays. By the end of the 19th century, studies were published that proved people working outdoors were more prone to skin cancer....so if you're out in the sun...make sure you use SPF.
