Start with a roux
Add milk (oat is probably fine)
Add nutritional yeast, soy sauce, herbs like sage and thyme, cumin, beer if you want
Just keep cooking it up until it tastes tangy
Optional: add a smidge of vinegar
Ash’s Greens
Sautee Turkey necks until kinda brown
Add chicken stock, sauteed onions, garlic, whatever
Braise meat until tender
Add greens (not kale)
Add seasonings (bay leaf, thyme, sage, pepper, mustard powder, smoked paprika, garam masala, whatever)
Boil another 20-30 minutes
Add a little apple cider vinegar but not too much
